It is kampung-style cuisine with a difference at Restoran Duyong in Kelab Darul Ehsan during the Ramadan buffet promotion.

The promotion offers an array of traditional Malay food.

Chef Mustafa Kamalahmad Sarbani, who leads the team at the restaurant, said most Malay food served at restaurants these days were not authentic.

“With our mixed culture, the food served has a Malaysian identity to it.

“For the promotion, we have authentic Malay food,'' he said.

Among these are Gulai Tempoyak, Gulai Kawah and Asam Pedas.

The highlight will be the Grilled Ox Tongue. Mustafa said the Malay delicacy was a popular dish during Ramadan at the outlet.

Appetisers: Ulams are also part of the buffet spread at Duyong Restaurant.
“Last year, we ordered about 1,000kg of ox tongue,'' he said.

To prepare the delicacy, the ox tongues are marinated with spices like oregano, basil and local spices such as cardamom and cinnamon for two days.

The ox tongues are then boiled to remove the layer of skin before it is baked.

“It is important to remove the skin after the marinating process to preserve the juiciness of the meat,” he said.

It is then served with air assam and other sauces like mushroom and black pepper.

The buffet is priced at RM43++ for adults and RM26++ for children.
